Sweet treats for health nuts

Steph PremWinter Olympian and five-time Australian snowboarding champ Steph Prem has turned a near-death back injury into a brand new career in health and wellness.

The Melbourne athlete was on the road to international stardom when a boarding accident broke her back, dislocated her hip and broke several ribs, along with a host of other injuries. She was attempting a huge jump soon after competing at the 2010 Winter Games and has been on a road to recovery ever since.

Steph turned to pilates to rebuild her battered body, quickly realising it was her calling. She took clinical training and now runs a swish health and wellness centre in South Yarra called Studio PP, offering pilates along with yoga, bootcamp, personal training, massage and nutrition advice.

So what does Steph tell her clients when it comes to sweet treats? Steph reckons the best option is to indulge in moderation and make a few healthy switches to keep on track. These are her five favourite summer recipes and cocktails.

1. STEPH’S BLISS BALLS

Christmas Bliss Balls, by Steph PremIngredients
1 cup almonds
1 cup macadamia nuts
1/2 cup sultanas or raisins
1/2 medjool dates (pipped)
2 tbs raw organic cacao
1-2 tsp maca powder
2 tsp cinnamon
1-2 tsp vanilla essence
1 cup coconut oil
Shredded coconut to roll
Method
Put all the ingredients in the food processor ( I use a Vitamix) until combined, adding coconut oil as you go to bring it all together. Roll into bite sized balls and then roll in coconut to finish. Can be frozen to up to 30 days.

2. SUMMER SALAD

3 sliced oranges
1 pomegranate
1 cup sliced strawberries
Juice of one orange
1 handful of mint leaves
Method
Cut all ingredients into beautifully cut pieces and combine in one of your fanciest bowls or dishes.

3. STRAWBERRY DROPS

Ingredients
1/2 cup Greek yogurt
1 tbs of honey
Large juicy strawberries
Thick lollipop sticks
Toppings such as pistachios, cashews, chai seeds
Method
Combine honey in bowl with thick greek yogurt, leave for 5 minutes until thickens. Insert sticks onto strawberries (greenery removed prior) then dip into yogurt and top with your choice of chopped nuts and seeds. Place in freezer on baking paper. Store for minimum of 4 hours for drops to become solid. Remove and enjoy.

4. CUCUMBER CRUSH COCKTAIL

Steph Prem's low calorie cocktailIngredients
30ml vodka
4 mint leaves
1 large basil leaf
1 lime wedge
1/4 fresh cucumber
120-150ml of soda water
Method
Infuse soda water with cucumber slices prior to party. Squeeze lime wedge into glass, add mint and basil leaves and vodka. Mix well before adding ice and cucumber infused soda water. Garnish with a slice of cucumber.

5. CITRUS SPARKLE COCKTAIL

Ingredients
30ml gin
1 lemon wedge
1 orange wedge
120-150ml of sparkling mineral water
Method
Squeeze lemon and orange wedge into a glass and add gin. Mix well before adding ice and Sparkling mineral water. Garnish with a slice of lemon.
